Growing up as a kid, I was not a picky eater; however there was something about cheap hot dogs that just didn’t sit well with me – seriously!!

Smokehouse Glenn brought in genuine, bonified – great tasting Dearborn product once again. Coney dogs were his featured item this week; made exclusively from Glenn’s old meat processing stomping ground for 30 years. Two types of coney style franks – natural casing and skinless franks.

The 1 – 2 Taste Punch of Turkey Brats From Smokehouse Glenn!!!

Ishpeming04/04/12 – Smokehouse Glenn brought in his own home-made brats this morning that filled the office with the office with wonderful aroma and give my taste buds a robust flavor experience.

Glenn brought in two type of his turkey brats – turkey brats and turkey brats with cheese. These brats start out from using bone-less dark meat turkey thighs; possessing a 90 – 95% leanness factor and containing the needed moisture content for delicious texture while enhancing the seasoning throughout the product.

Staying true to a already proven recipe, Glenn flavors his turkey brats with his same spice mixture recipe which he incorporates when making his beef brats. His in-house “secret recipe” has been developed by Glenn himself through many attempts to achieve just the right balance of spice flavors that please your taste buds!

Glenn’s brats with cheese use a high temperature commercial grade cheddar cheese which aids in better handling during processing. Normal cheese would break down as it reaches room temperatures, resulting in a softer texture. Consequently, using a normal grade of chedder will further lose its consistency and melt into a sauce-type fluidity within the casing; blending it into the meat mixture; losing the intended “bits” of cheese that you receive in every slice of brat!

Take a G-O-O-O-O-D look at those brats with cheese; will ya look at the size of those brats!!! Smokehouse Glenn uses only natural casings when stuffing his brats, resulting in the “plumper than normal sized” brats compared to other brats manufactured by commercial companies. Those other companies use synthetic/collagen-based casings in their goal to produce uniform, consistent packaging appearance. Ishpeming’s “custom-cut butcher” all about the natural, down-home flavor in his home made recipes that satisfy his customers!!

Cooking time is a snap in the pan or on the grill with these brats which would go great with home-made french fries and cole slaw!!

Ishpeming03/30/12- Smokehouse Glenn has made his decision to move his fine quality product meats from the Harvey location to the Country Village location in Ishpeming in the business decision to make his product more easily available to an increased number of shoppers in Marquette County.

My wife works at Bell Hospital, in close proximity to Smokehouse Glenn’s store. She purchased some steak that I grilled for my homemade fajitas. Mmmmm – I couldn’t have started out with a better grade of steak for my dish. We are glad that Glenn is located in Ishpeming; more purchases are on our future shopping list.

Potato Sausage – Is It Meat ?????

Marquette01/04/12 – I’ve heard of potato pancakes, potato chip and potato salad  – but POTATO SAUSAGE!!!! How can this be???? I thought meat was the traditional product that goes inside a sausage casing! This is NOT entirely the case (he he) with Glenn’s sampling of his refined recipe of potato sausage.

Having spent 30+ years with Dearborn Sausage downstate, Glenn has never had an actual demand for this unique (and for myself) somewhat unusual product. However, once relocating on the north end of the Mighty Mac, Glenn began to get requests for potato sausage; so he and Butcher Bob set out from scratch to generate a recipe for this “not all meat” type of sausage.

After several attempts to narrow down  just the right flavor he was looking to settle on for his recipe, he finally decided on the one he is currently using in his store.  Glenn’s ingredients include lean beef, pork shoulder cuts ; fresh Idaho potatoes and onions. These four main ingredients are ground together through the meat grinder, each of which are measured in somewhat  equal proportions. The additional ingredients are non-fat dry milk, salt, onion powder and “spices” (NO, this mixture will remain an in house secret!!!). This final mixture is then cased in natural animal casing.

Home made Potato Sausage

Once the sausage is cased, the product is immediately placed in the freezer to preserve the potatoes. What?? I did not think that potatoes would begin to oxidize (turn brown) through the casing wall but Glenn told me he found that this occurs so freezing avoids the spoiling of the sausage’s appearance.

Cooking process is achieved best when you place the sausage in a oven grade pan with a small amount of water in the bottom; just enough to last during the entire cooking time. Your cooking temperature is 350* for about 20 – 25 minutes or until the top of the sausage casing beginsto get crispy.

Having never tasted potato sausage, I was completely surprised with Glenn’s recipe. The taste is predominantly the combination of beef and pork supported with a robust flavor of onion. I actually couldn’t taste potato but I could see that it had its place in the recipe as one of the four main ingredients. The texture is just like any of your favorite sausage; the casing is firm with a snap to it when you bite into it. This is definitely a sausage like none other!!!

Big Juicy Taste is “Prime” with Glenn’s Prime Rib

Marquette12/28/11 – This exquisite cut of beef that Smokehouse Glenn brought into the studio today brought me back to the days I worked at a steak restaurant back house and I tasted my first cut of prime rib.  Our chef, Pat Badalamete alias Ragu, used to cook entire loins of prime rib each afternoon as one of the featured items on our menu. Working at a steak restaurant DOES have its advantages and that’s were I sampled my first portion of what is known as prime rib.

I learn something new every week talking with Glenn about his products. For the longest time, I was under the impression that prime rib is the cut of beef from the rib area which when first removed, contains the meat on the rib bones as an entire cut. As is, this cut actually is called a stand rib roast. After this entire cut of beef is prepared, each individual cut of beef is sliced, being removed from the rib bones and is referred to as prime rib. Mmmmm! Take a look at that section of beef, sorry about the reflection off the clear wrap. I told Glenn I needed to remove it to get a better picture but he didn’t go for it.

That’s only about 4 pounds of beef pictured there, can you imagine four time that amount of beef in one entire cut…that’s need one big roaster pan for the oven! That’s what Pat would prepare at the restaurant.

Glenn finalizes each prepared section of cut beef with his own special blend of steak seasoning and beef  rub for seasoning; no chance on getting the recipe, it’s a guarded secret from years in the butchering industry. Summer Sausage For Christmas Celebrating Is Delicious This Time of Year

Marquette12/21/11- Smokehouse Glenn has visited us today in the studio barring Christmas gift samples of tasty good cheer. Beef Summer Sausage with cheese and bits of jalapeno is a snack that is a great idea for anytime eating either by itself or accompanying a variety of snack tray items with veggies, cheese and crackers.

Glenn’s summer sausage is a mixture of his own beef sausage; his in-house blend of sausage spice and diced bits of jalapeno and cheese for a nice , pronounced amount of flavor that is not overbearing. This is delicious sausage which would compliment any party or snacking occasion. I can see this variety of summer sausage on my favorite Triscuit cracker with a dab of Guilden’s mustard on top. Mmmmm! This is a snack I could eat all afternoon watching hockey!!!

Northern Meat’s 2 Types of Bacon – Aren’t Bacon!!!!

Marquette12/07/2011 – Smokehouse Glenn arrived today at the station with his two varieties of bacon available in his butcher shop. These two featured items  would give one the impression that Glenn has taken up the art of practicing magic because these items are actually NOT what their name implies!

Bacon!!! Everyone is familiar with this pork product – the very item that some comedians make jokes about concerning consumers’ obsession to include it on every sandwich, meal and appetizer!! However, Glenn’s bacon is not like every other type of bacon because his cuts of meat are not originating from the belly but from the loins!!!

Glenn makes his “bacon” from boneless pork loins, lean and tender without the typical portions of fat that are characteristically part of the belly section. Glenn makes two varieties of bacon – a Canadian Bacon and a Smoked Yooper Bacon. The  Canadian variety posses a sweet flavor, incorporating a higher concentration of sugar to derive its distinct flavor. The Yooper bacon, the more popular of the two, mostly because of the name itself, gets its flavor from its hickory smoking process that Glenn uses in its preparation.

Either of these “bacons” would enhance any version of hamburger, sandwich or breakfast entree. What I am learning to look for in Glenn’s products is the key description, “ready to eat”,  which results from his cooking processes. This indicates that right off the shelf, this product can be eaten NOW, right out of the package…and Smokehouse Glenn’s products have delicious flavors that permeate his product that I would always tempted to eat them straight out of the package!!!

Porketta Roast is Ohhhhh, So Tender and Flavorful

Marquette11/30/2011 – Smokehouse Glenn is tagged as our area  “Custom – Cut Butcher” in Marquette but he is definitely your  “Go-To” guy for an extensive assortment of choice, tasty varieties of meat.

Today’s featured product is the Porketta roast, a tasty main entree that draws a portion of it’s distinctiveness from  a woman in Amasa…but more on that later.

Smokehouse Glenn, as his experience and reputation displays, begins with the utmost of quality product. Glenn starts with Dearborn Meats’ own Chairman’s Reserve selection of pork shoulder; boned and trimmed. These roasts can end up weighing approximately 8 to 9 pounds after processing but Glenn is accommodating to custom cut any roasts to smaller 2 to 3 pounders if desired.  Each roast is given the butcher’s special treatment, being  tied up nicely with butcher string to make the roasts easier to handle when cooking and serving.

Next comes Glenn’s special seasoning and he’s the first to admit that the uniqueness of his porketta roast’s flavor did not come from his own kitchen. Glenn’s business side-kick, Butcher Bob, owns property in  southwestern area of Marquette County, just outside of Crystal Falls. While in the area, Butcher Bob stopped into a small general store located in Amasa, where he discovered the store owner was selling her own local favorite blend of porketta roast spices. Bob decided to make a purchase and bring it back to the shop to try on Glenn’s roasts. WOW!!! Glenn and Bob both agreed that this blend was outstanding!! A smart businesman that he is, Glenn decided that his roasts with this newly discovered spice blend would be an outstanding taste combination. A kitchen-tested blend of black pepper, salt, garlic, dill weed, rosemary and crushed red pepper, make this porketta’s flavor one of a kind in this area.

Finally, the most important point to remember is to cook this roast SLOW!!!! The most important cooking tip to remember for the kitchen is to not get in a hurry and don’t have your cooking temperature too high.  Keep this in mind and you will experience a taste sensation like you would never believe!!!!

Dearborn Hungarian-style Smoked Kielbasa at Northern Meats

Marquette – 11/23/11 – This morning Glenn featured Dearborn Smoked Hungarian-style Kielbasa on his portion of this shopping show.  Everyone from the station always makes their way to Glenn a few moments after he enters the door as the aroma fills the offices and studios.  Glenn partners with Dearborne after working there for 30 years, and now carries many of their products in his store.  He carries their sausage products, hot dogs, lunch meats, smoked kielbasa, and can get almost any of their other products upon request.  Dearborn meats are top quality meat products as only Glenn would choose.

I took one bite of this kielbasa and immediately the flavor brought me back to many occasions my Mom prepared this similar, good-tasting kielbasa when I was growing up in New York…Mmmm, it was delicious then and was extremely delicious today!!!!

Along with many of Glenn’s other available meat products, these are quick and easy to cook and make a great snack or meal.  They are smoked so they are already fully cooked.  All you have to do is fry it in a skillet for a few minutes until it is warm.  The Dearborn Smoked Kielbasa is similar to Glenn’s homemade Polish Sausage.  The Kielbasa, however has more of a spicy flavor, with paprika and other spices added.

Ham Steaks: A Tasty Meal That’s Ready in a Flash

Marquette11/16/2011 – Today Smokehouse Glenn brought in a generous sampling of thick sliced pan fried bites of his Ham Steak.  This was the best ham I have ever tasted.  It was juicy, very thick cut and had a great smoky flavor.  The hams from which these slices are taken from are different in meat texture than the spiral sliced hams. They are juicier and cured in a approach which affords the use of this product its best taste when served warm.  These hams are processed using what is referred to as a sweet pickle cure which generates more of a sweet flavor than a salty flavor. Glenn sells this type of ham in the Old Fashioned full ham style, or in the popular ham steak style.  The ham steaks are great for a quick easy meal for two for dinner or it would make a great addition to a hearty ham and eggs breakfast!  I also see visions of delicious split pea soup with large, luscious chunks of this ham steak cut up!!! Mmmmm!!!!!! Since they are fully cooked, they only have to be warmed in a pan or on the grill in the summer.  You have to stop in and try one of these unique tasting, thick sliced ham steaks today!
