Smokehouse Glenn Makes Breakfast!

The great thing about a meat market is that meat is the basis of every meal – breakfast, lunch or dinner. Smokehouse Glenn decided to show us how well his home-made sausage works for a breakfast casserole dish.

Today, Glenn brought in two variations of a family breakfast casserole dish using two different sausages – his breakfast and his chorizo sausage. One casserole was made with Glenn’s breakfast sausage cooked in his Upper Peninsula Olive Oil flavored Wild Mushroom & Sage. The balance of the dish consisted of scrambled eggs mixed with mushroom soup, sliced mushrooms poured over a baking pan layered with croutons; topped with shredded cheddar cheese.

The second casserole variation had home-made chorizo cooked in chipotle infused olive oil, the remainder of the recipe is the same as the first. Both dishes were delicious; my taste leans more to the chorizo recipe because of the added spicy taste yet both are easy to make and would be a great dish in the morning to serve for the family.

Currently, Smokehouse Glenn has 37 different varieties of flavor infused olive oils. I had mentioned in last week’s post, balsamic vinegar is not the same any more – there are a number of flavor varieties to select from these days.. Just like the vinegars sold at Smokehouse Glenn, there are different flavored oils. Glenn even has 5 varieties of plain olive oil from different types of olives. With that much variety, these flavors will expand your favorite recipes with numerous flavor combinations!

Balsamic Vinegar Gets Drizzled on…Ice Cream!

The inventory of premium items continue to grow at Smokehouse Glenn’s and today we sampled something altogether different…and the die-hard meat whiners even tried today’s treat.

You will definitely find exquisitely home-made ice cream toppings on the Food Network but if you want unusual and expensive-tasting flavor toppings for ice cream, Smokehouse Glenn brought in something for us taste-balsamic vinegar on ice cream but not just any vinegar.

Several of Glenn’s lady customers suggested that he try a Dark Chocolate Balsamic Vinegar on top of ice cream. What – vinegar on ice cream! Come on, most of us are Hershey’s Chocolate lovers; don’t ruin my dish of smooth, creamy goodness! Ah, but wait…sometimes you have to step outside the box and let your taste buds explore a little! OK, so Glenn topped french vanilla ice cream with a drizzle of his Dark Chocolate Balsamic Vinegar. I dipped my spoon into my cup, little taste, another little taste, another taste – hey, these flavors taste good together! Sweet ice cream meets tangy balsamic vinegar with a hint of chocolate flavor in a delicious way!

WOW, what other flavors would work well on ice cream? Well, Glenn also has Strawberry flavored, Raspberry flavored balsamic vinegar AND Carra-Carra Orange Vanilla balsamic vinegar. There is nothing plain with balsamic vinegar anymore now that they are being infused with a wide range of flavors! Glenn’s new “Test Kitchen” is in the finishing stages of completion. Soon he and guest chefs will be cooking dishes for sampling right in the store so customers can taste what flavoring sensations can be purchased and enjoyed.

Smoked Fish & Cheese Curds…Ahhhh, What a Pair!

 A marriage of two incredibly tasting items were sampled today thanks to the distinctive selection of our well known custom-cut butcher himself, Smokehouse Glenn!

Today, Glenn brought in several products from companies that hold quality in as high esteem as Northern Meats does. Horseradish Cheddar Cheese Curds from Yancey’s Fancy Artisan Cheese and three different types of smoked salmon from Susie Q Fish Company.

I love ANY type of cheese and these cheddar cheese curds with horseradish is loaded with zesty flavor. Not too much to give you that brain zing but just enough to get you coming back for more.

 

FISH – I’ve never ate a type of fish I didn’t like and the same goes with this smoked salmon. Sampling three different flavored fish, I couldn’t decide which flavor I liked the best. Classic smoked, Cajon smoked and Pepper smoked salmon. Each of these salmon portions are fully cooked, ready to eat with your favorite crackers, or simply a finger food snack. Keep listening to Glenn on the Shopping Show, every Wednesday mornings. He said his test kitchen area is nearing completion and soon he will be preparing samples right in his shop for customers to try. Andouille with a New Smokehouse Twist!

Northern Meats has been expanding their store’s inventory over the past several months, adding to their product line flavored sea salts, flavor infused balsamic vinegars and olive oils. Today, Smokehouse Glenn decided to give my taste buds a tangy twist by giving his andouille a different seasoning spin!

Glenn’s andouille is fantastic tasting as it is; with his own recipe developed over 30 some years. However, today he decided to mix the flavors up a bit by hitting both ends of the taste spectrum incorporating sweet and spicy flavors.

Today, Glenn decided to saute his sliced andouille with olive oil infused with harissa. Harissa is a condiment from North Africa whose basic ingredients are chiles, garlic, coriander, cumin and salt. I’ve learned to taste the oils Glenn brings in to sample the straight up flavors used in his cooking. What a hit! This olive oil is nothing that I’ve ever tasted before – and the amount of heat the harissa added to the oil this name, harissa, I will add to my kitchen vocabulary.

On the other side of the flavor spectrum, Glenn used some pre-packaged Chow Chow from Troll Smokehouse. This particular cabbage relish contains cabbage, peppers, onions and sugar. A great compliment to the heat of the harissa olive oil that playfully swings your taste buds from heat to sweet.
