I am amazed how Smokehouse Glenn is continually pushing the test kitchen envelope with new meat product ideas! In my previous restaurant working days, I learned from a chef how to construct the chicken cordon bleu and I would have never dreamed that this dish would ever fit inside a sausage casing but Northern Meats has found a way.
Chicken cordon bleu consists of sliced ham, prosciutto or salami wrapped around Gruyere cheese which then has a flattened chicken breast wrapped around these layers. Final stage is to take the meat and cheese wrap, dip it in egg wash then bread crumbs and bake it. Smokehouse Glenn has cut down the prep time dramatically by grinding all the main ingredients and placed them inside an all natural casing.
