The saying is “the sky’s the limit”, Smokehouse Glenn has an eight foot long shelf in his cooler loaded with a variety of brats, wieners and sausage for his customers to choose from. Today, meet another great tasting selection from the “custom cut butcher”; his Italian sausage!

From his thirty some years with Dearborn Sausage down state, Glenn has come to learn that when you’re making authentic Italian sausage, the recipe calls for either anise or fennel. Of course, there are hundreds of different Italian family recipes treasured dearly but Glenn shared his particular recipe which he uses cayenne and crushed red pepper in his “hot” Italian sausage AND he also made his mild Italian sausage. Don’t be put off by the word, “hot” – Glenn is very taste conscious when it comes to making his product. He creates with the intention of a flavor that will NOT drive you away from your food.

Glenn’s added condiments to taste with these sausages are a Mild & Hot Pepper Relish from Troll Smokehouse, which are available from Smokehouse Glenn’s store. Actually these two items are sweet tasting and very delicious relishes that can be used on a variety of meat items.
