Delicious and Easy Chuck Roast!

Our busy lifestyles can direct us into a mundane, meal menu that can eventually become boring. Smokehouse Glenn has premium beef, pork, chicken and seafood AND he enjoys coming up with simple but flavorful seasoning to make mealtime delicious!

Today, Glenn brought in a chuck roast that he marinaded in one of several marinades available in his store. Excalibur Seasonings and Marinades out of Pekin, Ill. The marinade Glenn selected today was the Black Forest Prime Rib sauce. Rich soy sauce flavor based sauce with savory notes of garlic, onion and herbs. This sauce is delicious and its real easy to prepare this roast. Apply an ample amount of sauce over the roast, let it stand for about an hour then place it in your slow cooker. Voila! You could add potatoes, carrots and onions to complete your meal. Simple, easy and flavorful.

Sausage & Snack Sticks That Taste Great!

Snacking is a good thing, especially if you are eating delicious tasting snacks to begin with. Venison processing is a big part of Smokehouse Glenn’s business. Glenn encourages hunters to bring in their venison in skinned & quartered or de-boned AND Glenn will even smoke a hind quarter for you – it will turn out amazingly delicious!

Today, Glenn brought in three varieties of venison snacks – Jalapeno & Pepper Jack Summer sausage (his top seller), Habanero Snack Sticks and Summer Sausage. If you’ve never tasted venison, you would never believe something like these snacks made from this wild game could taste so good. The Habanero sticks had a delayed heat reaction on your palate but not too overwhelming to not enjoy. Jalapeno & Pepper Jack Summer sausage is great – any meat product with a great tasting cheese blended in a superb.

Smokehouse Glenn, the man who likes to provide taste variety for his customers, makes some of the leanest hamburger patties in the area. However, flavor combinations are his business and Mushroom – Swiss burgers are in the house today!

Lean, 1/3 pound burgers with fresh mushrooms and delicious Swiss cheese added to the mixture is an extremely tasty combination. Glenn grilled these burgers up, toasted hamburger buns and brushed them with some Butter flavored infused olive oil. If you have never tasted the olive oils from Smokehouse Glenn’s; you’re missing out on immense flavor. I have added this olive oil to my favorite pasta dishes and the taste was big!

Today Glenn shared grilled boneless pork loins with a seasoning blend of Glenn’s own design. Caribbean Heat Seasoning. With a blend of Turmeric, Curry Powder, Cumin and Coriander; this is a very tasty rub or sprinkling seasoning to apply to pork, beef or chicken. There really isn’t any “heat” to this blend, just a savory combination that makes the meat come alive.

Another Brat Creation From Smokehouse Glenn

Brats are for barbequing to satisfy your hunger in a tasty way. The place to visit for the largest selection of flavored brats is Smokehouse Glenn. The “custom cut butcher” brought in his Chicken Bacon Ranch brats BUT he is always finding creative ways to flavor his delicious products. Today he added two mustards from Woeber’s of Springfield, Ohio; Cranberry Honey and Champagne Dill mustards.

Cranberry Honey is made of a pure, golden honey blended with fresh, ground cranberries and special seasoning. Tasty with a great sweetness from the fresh cranberries. Champagne Dill is their famous dijon mustard with a mix of dill seasoning. This mustard is more my flavor choice with the dill making it unique in itself.

Brats – kielbasa – hot dogs – sausage; you can find it at Smokehouse Glenn’s and it’s home made. Today, it was home made wieners and not just ordinary ones either. By customer request, Smokehouse Glenn brought us the “Bun-Busting Wieners”!!!

Bigger than ordinary wieners, packed with Glenn’s very own seasoning recipe, using select cuts of pork in natural casing – these are delicious! The flavor is big, the size is big; by the time you add your favorite condiments, the bun won’t be able to hold all this deliciousness!

As an added flavor boost, Smokehouse combined these tasty wieners with a barbeque sauce from Walnut Creek. One of several products from Walnut Creek, Glenn choose their Spicy Chipotle Apple Butter Barbeque Sauce to these sliced up wieners and voila – instant appetizer! Don’t let the Spicy Chipotle in the name shy you away from trying this sauce. That flavor is very mild in comparison to the sweet, apple butter flavor that is prominent in this sauce!

Glenn Adds Extra Somethin’ to His Sausage!

The one good thing about Smokehouse Glenn’s amazing meat store, beside the fact that he carries the BEST in beef, pork, chicken or seafood is that he has products that cover all meals of the day – breakfast, lunch and dinner.

Today, Glenn reached into his breakfast goodie bag and pulled out several batches of his home made breakfast sausage and added two different yet flavorful balsamic vinegars. Like all his home made sausages, Glenn starts with the leanest cuts of pork shoulder, his seasoning recipe perfected of the years and ground to just the texture. In addition to an already great tasting product, Glenn decided to add a flavored balsamic vinegar to each of his two batches of sausage – Honey Ginger and Black Cherry vinegars. Each batch had its own marinade of flavored vinegar over night then skillet cooked in the morning. These vinegars explode with flavor and each saturate the sausages with their distinct flavor.

Home Made Dogs With Tasty Mustards

Since my very first taste of Smokehouse Glenn’s homemade hot dogs, I have relived the flavor sensation of great tasting dogs I ate at the Cleveland Indians ballpark as a kid. They always tasted 10 times better than what we ate at home for dinner. Once again, Glenn brought in his homemade hot dogs – his recipe incorporates a course ground blend of beef and pork smoked AND in natural casing! The flavor doesn’t get any better than this – heaven in a bun!

Any great tasting hot dog worth eating needs to be complimented with an equally great tasting mustard and Glenn carries only the best from Woeber’s of Springfield, Ohio. Today, I sampled Woeber’s Sandwich Pal Mustards in Jalapeno flavor and Sweet & Spicy. I need a mustard to deliver a little more flavor than simple salad mustard and both of these flavors are A-1! Jalapeno flavor has just enough of the jalapeno flavor to make it stand out in the crowd of spiced mustards. The Sweet & Spicy variety favors the sweet side like that of a sweet relish taste. There is a very mild amount of spice that is a pleasant blend of tastes. This flavor does have an appearance of a spicy brown mustard but don’t let the color fool you!

Smokehouse Glenn is always working hard to stay stocked up on his premium selection of steaks, chicken and chops. Stop in soon and take advantage of his freshly made Andouille and smoked polish sausage. The area’s “custom cut butcher” also has – alligator! Fresh, frozen one pound packages of lean tail meat! This sounded very tempting to try – so much so that I looked up a recipe from the Food Network’s website and found a Cajun recipe from Emeril Lagasse.

 

Stewed Alligator in Creole Sauce

Ingredients

2 tablespoons olive oil
1 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped bell peppers
2 tablespoons minced garlic
3 cups peeled, seeded, and chopped plum tomatoes
1/4 cup chopped fresh basil
2 tablespoons chopped fresh oregano
2 teaspoons chopped fresh thyme
Salt and cayenne pepper
Fresh ground black pepper
2 teaspoons Worcestershire sauce
3 cups chicken stock
11/2 cup chopped green onions
1 pound alligator, cut into 1-inch pieces
8 tablespoons butter, at room temperature
Crusty loaf of French bread
2 tablespoons finely chopped parsley

Directions

In a saucepan, heat the olive oil. When the oil is hot, saute the onions, celery, and peppers for 1 minute. Add the garlic and continue sauteing for 1 minute. Stir in the tomatoes, basil, oregano, and thyme. Season with salt, cayenne and black pepper. Add the Worcestershire sauce and chicken stock. Bring the liquid up to a boil. Add the green onions and alligator, cover. Simmer the mixture for 12 minutes. Remove the sauce from the heat and swirl in the butter. Spoon the stew in a shallow bowl. Garnish with parsley. Serve with the crusty bread.
