Smokehouse Glenn hit the office this morning with two recipes that tasted amazing and these recipe samples didn’t last long on my desk once these dishes were spotted.

For a great tasting breakfast, let’s start with Glenn’s Frisky Frittata recipe. This scrambled egg dish used Glenn’s breakfast sausage sauteed in his Organic Garlic infused olive oil, eggs, salt and pepper, sliced sweet peppers, diced onions and a grated blend of Asiago and Parmesan cheeses. Real easy to make and very tasty! This dish could easily go along with hash browns, toast and fresh brewed coffee!

Thinking about lunch – try this Enchilada dish that is also delicious and easy to make with a few ingredients. Glenn browned one pound each of ground beef and turkey in a skillet with some of his Harissa infused and Cilantro /Roasted Onion infused olive oils. Add to the meat some cooked chopped onion along with ½ t of cumin and 1 ½ T chili powder; along with salt and 16 ozs. of tomato sauce. The pictures show how good theses dishes look but the final proof is in the TASTING – very delicious!

Speaking of tasting, Smokehouse Glenn will officially launch the public unveiling of his “Test Kitchen” during his Open House at his store; Saturday, March 15th from 10 to 6! Customers can come in on that Saturday and watch as Glenn will actually be cooking a dish in the Test Kitchen, using meats and assorted flavor infused oils, vinegars, sea salts and seasonings! Northern Meat’s New Sea Salts Selections!

 Glenn’s own smoked polish kielbasa was kicked up a notch with some pan frying time in some of the Tuscan Herb infused olive oil to get things going. Next this sauteed kielbasa was mixed in with a batch of Armenian Rice Pilaf and Voila! There is a great lunch full of flavor and easy to create!

A new product line of seasoning to Northern Meats is an assortment of sea salts from two suppliers Glenn is doing business with. The Salt Works from Woodinville Washington and S~A~L~T Sisters of Goshen, Indiana. In Glenn’s sea salt sampler basket, he had four varieties of flavored sea salts from the Salt Works that Glenn in packaging himself from bulk. These flavors I tasted myself and was impressed with the varied flavor combinations found in each of these blends: Habanero Heat Sea Salt, Himalayan Pink Sea Salt, Jalapeno Sea Salt and Smoked Sea Salt. Each of these salts had a distinct, lively flavor to them and I’ll bet these each would accent the taste of any dish they were used in.

The Salt Works has a very informative website about the salts they sell and the numerous uses for salt (other than simply for the table salt shaker). I found out reading the Salt Works page on salt in general, that salt can be purchased in varied types of salt: mainly – Flavored ( Fusion® flavored salts bind natural ingredients to sea salt crystals ), Flaked,( a light crystal reminiscent of snowflakes. Seawater is evaporated using the natural processes of sun and wind ) Finishing ( most admired for their unique textures—either moist crystals or delicate flakes)and Course ( large-grained salt crystals best used in a grinder, providing an easy way of serving up freshly ground sea salt ).

Ham Steak with a Seasoning Twist

Smokehouse Glenn has been expanding his butcher shop inventory to now include quality extra virgin olive oils and flavored balsamic vinegars for his customers create their own blends of marinade recipes for their meal planning.

Today, Glenn brought in one of his premium ham steaks cut from a Dearborn Sausage ham. What he created as a glaze sauce was a mixture of Blood Orange extra virgin olive oil & Cinnamon Pear Balsamic vinegar.

Before I sampled the ham steak itself, I tasted both the oil and the vinegar to gauge where these condiments flavors were. Immediately, I could taste the citrus flavor of the orange infused in the oil, robust and full of blood orange flavor. The balsamic vinegar possessed an aged flavor with a sweet tingle from the blended cinnamon and pear flavoring.

Cooking process for this was simply placing the ham steak in the oven to broil just long enough to completely warm the meat and activate the marinade broiled in the oven. These ham steaks are an extremely easy entree to prepare for a meal. The ham is fully cooked so it requires only warming up to medium temperature. These Dearborn hams sell themselves on their taste quality alone.

Purchase a ham steak to sample the quality taste for these hams; you will them want to buy a whole ham for your next family holiday meal. Dearborn does not overly cure their hams with excessive salt nor do they add water to them. You have to taste one to appreciate the quality and realize what you’ve been missing all these dinners!

Cheesy Bacon Dogs Are Tasty Finger Food!

Another easy and delicious snack item though up by Smokehouse Glenn is his very own – Cheesy Bacon Dogs! Real simple item to make using three items from Northern Meats. Glenn takes Dearborn Skinless Franks, slices them down the middle and stuffs pieces of sliced Colby Jack cheese then tops each dogs with a slice of his hickory smoked bacon on top. Slide the pan into the broiler and cook until the bacon is done! Simple to make – delicious items made with Glenn’s own thick sliced smoked bacon, Mmmm!

Smoked Andouille Sausage – A Taste of Cajun

Smokehouse Glenn brought in a returned favorite of mine that I have used in a favorite recipe of mine – andouille sausage. This is a smoked Cajun sausage used in gumbo, jambalaya or nay dish that you would want to add a spiced meat into giving it a lively flavor that will spark your taste buds. The last time Glenn brought this item in for sampling, I stopped by to get a package which I added to my own jambalaya recipe. Man – did this sausage kick it up to another flavor level!!!

Beef Bacon New Test Kitchen Item at Northern Meats!

 BACON! What would man do without it! Everything goes better with bacon. But…can you make bacon from something other than pork? That is a test kitchen challenge that Smokehouse Glenn tackled this week.

What if one needed bacon but didn’t have any pork to smoke it from? Glenn decided to look into the prospect of using a cut of beef from the area of the steer known as the plate to possibly generate some bacon from it. Glenn told me that the plate section is used in the making of pastrami; one of my favorite deli meats. Glenn used his exact same process to make bacon but substituted a sliced plate portion of steak for his kitchen experiment. Was he successful? You bet – just look as this photo! Great smoky flavor, fried up well in his skillet; maybe not as crispy as bacon but delicious and very bacon-like! Glenn, you are amazing!

Another New Taste Discovery From Smokehouse Glenn

Through the daily meat processing steps of a custom cut butcher, one might think that the work routine would become boring and mundane – except at Northern Meats! Smokehouse Glenn always seems to stay connected with his taste buds and the pulse of his customers. Today, Glenn brought in the Santa Fe sausage – bit don’t be fooled by it’s appearance. I thought it was another fantastic tasting brat but it’s not – it’s a plump sausage, full of Glenn’s new flavoring with his newly discovered “southwestern spice”. I not only was treated to tasting this delicious new product but Glenn dressed it up by putting his Santa Fe sausage in a fresh wheat hot dog bun; poured a layer of mild salsa on top and melted some Mexican blended shredded cheese to finish things off!

Ham Steaks – A Slice of Delicious Dearborn Goodness

 Smokehouse Glenn brought in samples of his personally cut ham steaks; a thick sliced slab of great tasting ham from a Dearborn smoked ham. This is a real convenient serving of delicious Dearborn smoked ham so you don’t have to be concerned with eating an entire Dearborn ham all by yourself.

Glenn has shared Dearborn ham with us before, let me tell you, that is about 8 to 10 pounds of ham at one sitting and you don’t want any of that to go to waste so Glenn came up with the idea to just slice slabs of ham from one of those Dearborn hams and make individual steaks that can be warmed up as a main dish for a meal, barbequed, oven baked with a glaze or diced up and used in a main dish in a variety of ways, like an omelet, a salad, even on Hawaiian pizza!

Improved Natural Casing Wieners Are Perfect!

If you go back to our June 19th page, Smokehouse Glenn made some delicious old style wiener; the ONLY draw-back to it was that the natural casings Glenn used were a smaller diameter than what he wanted to use.

This time, Glenn procured the size casing he had in mind the first time, so now you have the ultimate “old style” wiener that should be the envy of all other wieners! Old style meaning that the meat is ground courser than today’s recipe; Glenn knows how to put the smoke to these wieners and the natural casing gives the proper “snap” each and every bite!

 

 

What I like about the proper size casings is that it allows for More Pork to be stuffed in these wieners – and the smoke flavor makes these fantastic!!!
