The Battle of the Polish Sausage

Smokehouse Glenn has over 45 years of sausage making experience with Dearborn Sausage and you can tell with every bite that he has learned the business very well. Today, Glenn brought in two varieties of his polish sausage – Fresh and Smoked polish sausage.

Glenn’s background story on polish sausage is that it is one of the simplest variety of sausage with regard of the flavoring in its recipe. Polish sausage uses salt, pepper, garlic and Marjoram. Any other variety of sausage add to this base recipe to generate their own ethnic taste. Now, add cure and smoke your recipe and you have smoked polish sausage – both recipes served in natural casing for that tremendous sausage SNAP!

The fresh variety will receive the extra grilling taste very well since it is such a simple mixture. The smoked recipe is my favorite with its robust essence from the smoking process.

Smokehouse Glenn will be closed to observe Thanksgiving but will be opened for Black Friday shoppers from 10 am to 6 pm. Remember to ask Glenn about his holiday sampler boxes for his olive oils or balsamic vinegars as holiday gifts.

Homemade Polish Sausage Topped With BBQ Sauce!

Smokehouse Glenn is by far the best sausage maker in the area – whatever he stuffs in a natural casing is thumbs up delicious! Today, he shared his fresh polish sausage with us topped off with a choice of two of his new BBQ sauces. I tried both of his BBQ sauces that he brought in – Sugar Free BBQ Sauce & South Texas BBQ Liquid!

I already know that Glenn’s Polish sausage is delicious but the test was which of his BBQ sauces would win a favorable vote. It is surprising that the Sugar Free sauce still had a sweet taste to it but it does have a form of sugar (maltitol) in it or it wouldn’t have it’s sweet taste. The South Texas BBQ is thick, hearty and smoky sweet! My choice is the South Texas – it reminds me too much of my favorite sauce already! Either choice, you will love Glenn’s new sauces!

Smoked Polish Sausage – Traditional Taste Sensation!

One of the first items that Smokehouse Glenn brought to the office for us to sample was his Polish Sausage. We revisited this delicious item today and it tastes outstanding as it did previously. Polish sausage was a part of our dinner rotation growing up because of my Mom’s polish background. Boy, does this bring back childhood memories – delicious dinners made by Mom with delicious Polish sausage, Mmmmm!

As Glenn explained to me, the recipe for Polish sausage is one of the simplest for seasoning – salt, pepper, garlic & Marjoram; the Polish keep the flavoring simple and oh, so good tasting! To personalize his particular recipe, Glenn sprinkles a very small pinch of chili pepper flakes for an occasional spark of heat to tease the taste buds! If you have never tasted Polish sausage, you owe yourself a favor to get some of this smoked savory goodness from Northern Meats!


Saturday, the 23rd, Northern Meats will be featuring their 3rd Sample Saturday – Hamming it up with Dearborn Hams! Stop in and see Glenn spiral slice and glaze these delicious Dearborn hams. I’m stopping in because I want to see the glazing process. Don’t forget, Smokehouse Glenn will be offering samples and taking orders for Easter hams!!

Skirt Steak With a Special Marinade

Smokehouse Glenn featured skirt steak today for his featured beef item and this particular cut was prepared two different ways.

Northern Meats Country Villege

The first selection of skirt steak was seasoned with an ordinary blend of steak seasoning, predominately made of salt, onion powder and garlic. The second selection Glenn used a Habanero Lime packaged marinade to up the flavor ante which was very tasty. Habanero peppers are 5th on the Scoville Heat Units chart, no possessing a particularly distinct taste of its own but very fiery amount of heat this pepper possesses.

Glenn cooked his beef portions on his George Foreman Grill this morning, preferring to cook indoors and try a different cooking application then his outdoor B-B-Q grill. The skirt steak is a thinner, more marbleized selection from the cow so it cooks up fast when preparing it to a medium rare to medium consistency. Because the skirt steak is so slender and thin muscle mass, it slices up perfectly for the ideal fajita or oriental stir fry dish, I would even try using this steak for making my own version of a steak and cheese sandwich.


Of course, when it some to beef, Northern Meats carries an extensive selection of cuts for practically any type of dish his customers are looking for and if he doesn’t carry it, Smokehouse Glenn knows how to get it. His selection also includes select cuts of Chairman’s Reserve certified premium beef in filets, rib-eye and NY strips.


Pork selections come in bone in or boneless pork chops, porketta roast, bacon and hams. Chicken cuts come in boneless breasts, marinaded chicken breasts in lemon-pepper, butter-garlic, B-B-Q, Italian and habanero lime flavors.


Glenn can also provide sausage making services for any pre-cut venison brought to his store and can connect hunters with an outside source that will process and package venison for anyone needing that particular service.

Savory Smoked Polish Sausage Hit The Mark

Marquette08/31/2011– Smokehouse Glenn made his weekly Wednesday appearance at the radio station today for the Shopping Shop and dazzled my taste buds with the latest sampling of his Smoked Polish Sausage. I remember as a kid, my Mom would make Polish sausage and sauerkraut for dinner but this sausage was not in my childhood memories.

There was an inviting aroma sneaking out of Glenn’s sample tray that was the first stage of this week’s sampling experience. I couldn’t actually place a particular spice aroma emminating from the sausage and I looked at the package labeling to gain a clue to his seasoning secret. I see Glenn has “spices” listed on the label, will he share his secret? Polish sausage is seasoned very simply, Glenn says, this one has garlic powder, brown sugar, salt and marjoram. Simple enough, but in the correct proportions to consist of a light and delightful flavoring. Upon biting into my sample portion, my immediate attention was on the casing; not too thick and chewy, like some varieties. Pork is moist and again seasoned just right!! Now this Polish sausage would gain a spot on my Mom’s selective standards for her Polish dishes –  – Oh, Mom, it’s really good!!!! You need to try this!!!
