Mild & Hot Italian sausage

Mild & Hot Italian sausage

From his thirty some years with Dearborn Sausage down state, Glenn has come to learn that when you’re making authentic Italian sausage, the recipe calls for either anise or fennel. Of course, there are hundreds of different Italian family recipes treasured dearly but Glenn shared his particular recipe which he uses cayenne and crushed red pepper in his “hot” Italian sausage AND he also made his mild Italian sausage. Don’t be put off by the word, “hot” – Glenn is very taste conscious when it comes to making his product. He creates with the intention of a flavor that will NOT drive you away from your food.

Glenn’s added condiments to taste with these sausages are a Mild & Hot Pepper Relish from Troll Smokehouse, which are available from Smokehouse Glenn’s store. Actually these two items are sweet tasting and very delicious relishes that can be used on a variety of meat items.

Mesquite Chicken Patties with Salsa!

Published by Rilee Waller on July 24th, 2014

Smokehouse Glenn took our office by surprise with a new item none of us would have ever thought of trying as a taste test sample item – Mesquite Chicken Patties. In the past, the taste (or lack of) in a processed chicken patty is something I would like to stay away from. Glenn’s freshly made patties are a product you will purchase more than once.

Pre-cooked home made chicken patties

Pre-cooked home made chicken patties

Starting off with ground white meat of chicken (and some dark mixed in) added to that a smoke mesquite flavoring and pressed into thick patties. Glenn pre-cooked these patties which enables them to hold together better without any outside breading added. The only remaining thing to do is warm them up before eating – in a pan, in the microwave, on the grill. Warmed up, Glenn served these patties on a hamburger bun, slice of American cheese and some Walnut Creek Black Bean Salsa.

Thick, juicy with mesquite flavoring

Thick, juicy chicken patties with a hint of smoky flavor along with a sweet tasting salsa – Glenn has created one chicken patty with a delicious flavor. The patty held together well in the bun and it doesn’t have a breading for an outer coating. I want more….

Speaking of new test kitchen items, Glenn has added a chicken cordon bleu sausage and a Santa Fe chicken sausage to his ever increasing selection of available sausage and brats to buy.

Home made Wieners With a Sweet-tasting BBQ Sauce

Published by Rilee Waller on July 16th, 2014

Brats – kielbasa – hot dogs – sausage; you can find it at Smokehouse Glenn’s and it’s home made. Today, it was home made wieners and not just ordinary ones either. By customer request, Smokehouse Glenn brought us the “Bun-Busting Wieners”!!!

Bust your buns!

Bust your buns!

Bigger than ordinary wieners, packed with Glenn’s very own seasoning recipe, using select cuts of pork in natural casing – these are delicious! The flavor is big, the size is big; by the time you add your favorite condiments, the bun won’t be able to hold all this deliciousness!

As an added flavor boost, Smokehouse combined these tasty wieners with a barbeque sauce from Walnut Creek. One of several products from Walnut Creek, Glenn choose their Spicy Chipotle Apple Butter Barbeque Sauce to these sliced up wieners and voila – instant appetizer! Don’t let the Spicy Chipotle in the name shy you away from trying this sauce. That flavor is very mild in comparison to the sweet, apple butter flavor that is prominent in this sauce!

Using toothpicks, they tasted great by themselves OR you could serve them on your favorite cracker for extra appetizer goodness!

NEW from The Salt Works of Seattle, WA. Glenn just received Black Hawaiian Sea Salt!! I am already a flavor fan of the Himalayan Pink Sea Salt, containing 84 trace minerals, very tasty and better than ordinary table salt. The Black Hawaiian Sea Salt is solar evaporated Pacific sea salt combined with activated charcoal.two salts

Spicy Brat Patties With X-tra Flavor!

Published by Rilee Waller on July 9th, 2014

Smokehouse Glenn has the biggest variety of brat flavors I’ve EVER found in a meat market! Today, Glenn brought in his legendary “jalapeno and pepper jack” brats BUT in patty form on buns. These brat patties are incredible “as is” just because Glenn starts off with premium select cuts of pork, coarsely ground, his special seasoning recipe, bits of jalapeno peppers and chunks of pepper jack cheese.

Spicy Ketchup & Mayo!

Spicy Ketchup & Mayo!

However, Glenn didn’t stop there with his flavoring. He brought in two samples from the dozens of specialty condiments found at Smokehouse Glenn.
Mama Selita’s Jalepeno Ketchup has “Sassy Attitude” made by from RedGold Tomatoes. Their slogan – Use it on whatever your heart desires. This is definitely ketchup plus extra flavor. I would use this on my home made oven baked french fries!!!

Nothing Ordinary With These Two!

Nothing Ordinary With These Two!

Woeber’s Kickin’ Buffalo Mayonnaise is definitely a condiment spicy flavor lovers should have on their table. The secret to this feisty flavor is the red cayenne peppers used in their recipe. This is the fourth Woeber’s product that I love; I’ve tried Horseradish Sauce, Jalapeno Mustard and the Sweet &Spicy Mustard – very good and tasty flavoring!
Glenn offers his brats in patty form during the summer but in brat links form, they’re always available all year long.

Whether its brats, sausage, premium cuts of steak, pork chicken OR seafood you’re craving for your next meal, stop in and see Smokehouse Glenn to fill your order of delicious items.

Glenn Adds Extra Somethin’ to His Sausage!

Published by Rilee Waller on June 25th, 2014

The one good thing about Smokehouse Glenn’s amazing meat store, beside the fact that he carries the BEST in beef, pork, chicken or seafood is that he has products that cover all meals of the day – breakfast, lunch and dinner.

Two Flavors

Two Flavors

Today, Glenn reached into his breakfast goodie bag and pulled out several batches of his home made breakfast sausage and added two different yet flavorful balsamic vinegars. Like all his home made sausages, Glenn starts with the leanest cuts of pork shoulder, his seasoning recipe perfected of the years and ground to just the texture. In addition to an already great tasting product, Glenn decided to add a flavored balsamic vinegar to each of his two batches of sausage – Honey Ginger and Black Cherry vinegars. Each batch had its own marinade of flavored vinegar over night then skillet cooked in the morning. These vinegars explode with flavor and each saturate the sausages with their distinct flavor.

Home Made Dogs With Tasty Mustards

Published by Rilee Waller on June 18th, 2014

Since my very first taste of Smokehouse Glenn’s homemade hot dogs, I have relived the flavor sensation of great tasting dogs I ate at the Cleveland Indians ballpark as a kid. They always tasted 10 times better than what we ate at home for dinner. Once again, Glenn brought in his homemade hot dogs – his recipe incorporates a course ground blend of beef and pork smoked AND in natural casing! The flavor doesn’t get any better than this – heaven in a bun!

Sweet & Spicy mustard!!

Sweet & Spicy mustard!!

Mmmm - Are these great!

Mmmm – Are these great!

Any great tasting hot dog worth eating needs to be complimented with an equally great tasting mustard and Glenn carries only the best from Woeber’s of Springfield, Ohio. Today, I sampled Woeber’s Sandwich Pal Mustards in Jalapeno flavor and Sweet & Spicy. I need a mustard to deliver a little more flavor than simple salad mustard and both of these flavors are A-1! Jalapeno flavor has just enough of the jalapeno flavor to make it stand out in the crowd of spiced mustards. The Sweet & Spicy variety favors the sweet side like that of a sweet relish taste. There is a very mild amount of spice that is a pleasant blend of tastes. This flavor does have an appearance of a spicy brown mustard but don’t let the color fool you!

NOT your ordinary mustards!

NOT your ordinary mustards!

Smokehouse Glenn is always working hard to stay stocked up on his premium selection of steaks, chicken and chops. Stop in soon and take advantage of his freshly made Andouille and smoked polish sausage. The area’s “custom cut butcher” also has – alligator! Fresh, frozen one pound packages of lean tail meat! This sounded very tempting to try – so much so that I looked up a recipe from the Food Network’s website and found a Cajun recipe from Emeril Lagasse.

Stewed Alligator in Creole Sauce

Ingredients

2 tablespoons olive oil
1 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped bell peppers
2 tablespoons minced garlic
3 cups peeled, seeded, and chopped plum tomatoes
1/4 cup chopped fresh basil
2 tablespoons chopped fresh oregano
2 teaspoons chopped fresh thyme
Salt and cayenne pepper
Fresh ground black pepper
2 teaspoons Worcestershire sauce
3 cups chicken stock
11/2 cup chopped green onions
1 pound alligator, cut into 1-inch pieces
8 tablespoons butter, at room temperature
Crusty loaf of French bread
2 tablespoons finely chopped parsley

Directions

In a saucepan, heat the olive oil. When the oil is hot, saute the onions, celery, and peppers for 1 minute. Add the garlic and continue sauteing for 1 minute. Stir in the tomatoes, basil, oregano, and thyme. Season with salt, cayenne and black pepper. Add the Worcestershire sauce and chicken stock. Bring the liquid up to a boil. Add the green onions and alligator, cover. Simmer the mixture for 12 minutes. Remove the sauce from the heat and swirl in the butter. Spoon the stew in a shallow bowl. Garnish with parsley. Serve with the crusty bread.

Glenn’s Roasted Chicken Swirls Taste Good!

Published by Rilee Waller on April 3rd, 2014

This morning, it was poultry time with Smokehouse Glenn featuring a recipe from his kitchen once again incorporating seasoning items from his store. Glenn got a hold of a recipe Roasted Garlic Chicken Swirl and in this recipe Glenn used his Apple Cinnamon Bacon, Butter Garlic marinaded Chicken along with Cinnamon Pear Balsamic vinegar from his store.

Roasted Garlic Chicken Swirls

Roasted Garlic Chicken Swirls

Starting out with his Butter Garlic marinaded chicken breasts, Glenn ran them through his “cuber” which tenderizes the chicken and flattened them out in one process. With the chicken breast flattened out, he then placed a mixture of fresh minced garlic, sauteed onion, cooked spinach, crumbled up Apple Cinnamon bacon and Cinnamon Pear balsamic vinegar. This mixture was placed on the middle of the chicken, rolled up and baked in the oven until the chicken was cooked. As you can see, very tasty – simple to make and delicious!Chicken _Vinegar

Dearborn Ham Gets Balsamized!

Published by Rilee Waller on March 20th, 2014

Smokehouse Glenn experimented successfully this morning with two flavored balsamic vinegars that he added to Dearborn spiral sliced ham. Glenn experimented with two different flavored balsamic vinegars and came up with two distinct tastes for an already proven product – Dearborn ham!

Jazzed up flavored ham!

Jazzed up flavored ham!

Maple flavored and Pineapple flavored vinegars were drizzled over slices of Dearborn ham and warmed in the oven. Simple, flavorful and many tasty applications! Use this ham in a breakfast dish, a hot ham sandwich with mashed potatoes or as a party hor d’orve. You could also combine the maple and pineapple to make a glaze for pork chops, pork steaks or roasts.

Vinegars sold in three sizes!

The pineapple flavor was the more preferred choice over maple, personally, I’m more accustomed to family recipes that had pineapple rings and cherries on our whole ham than maple. However, I think the maple flavor would work well in a baked bean dish or possibly mixed in your pancake patter!

Smokehouse Glenn’s Open House went well this past weekend. Glenn featured several dishes also featuring his fruit flavored vinegars as toppings for ice cream. Now that his Test Kitchen is fully functional, the store will feature weekend cooking and sampling of various recipes using his store products. Stop in and taste the variety available from Smokehouse Glenn’s 38 different flavored olive oils and balsamic vinegars. He also carries a variety of flavored sea salts and seasonings from The Salt Works and Salt Sisters.
