Beef Tri-Tip is a Tasty and Affordable Entree

 There are three cuts of beef from the sirloin section of the steer, one section, the tri-tip was brought in by Smokehouse Glenn. This particular cut is slightly marbled extremely tender and flavorful! Glenn cut the steak from out of the tri-tip roast, which is a larger cut from the sirloin section.

He added to this meat a burgundy pepper flavored marinade, which is one of Glenn’s favorite flavorings and this sampling was amazingly good.

This cut I would pick for shish kabobs or fajitas or a stir fry dish calling for beef. Don’t forget that Northern Meats has an extensive variety of beef, pork, chicken or seafood! The other week I had a bad craving for fried rice, needing bacon and some shrimp. I pick up two packages of hickory smoked bacon and 20-25 count shrimp. My fried rice was DELICIOUS!!!

Pork Loin Like I’ve Never Seen – or Tasted!

Today, I saw something I’ve never laid eyes on before – the biggest pork loin I’ve ever seen! The thickest end had to be bigger in girth than a baseball bat! I would guess the weight had to be between 2 to 3 pounds. Size is one thing – taste  is a whole different matter and Glenn came through again. He found a pork loin from a meat packing company out of Chicago that delivers the goods on a tender cut that was delicious.

Collaborating with his flavor partner, Spicy Jo, Glenn seasoned sliced cutlet pieces of this loin with “Sweet & Sassy Garlic Spice” then sauteed them in a fry pan…Mmmmm, were these tasty! I say “were” because they are all gone!! Nestled on a bed of rice pilaf, this pork tasted great. Of course, this pork would also taste great on the grill coated in BBQ sauce, slow cooking or let it marinade in a favorite flavor of your choice and when the cooking’s done, you are in for a fantastic meal!

Northern Meats carries not only pork cuts but also beef, chicken AND seafood! Last Sunday, I stopped in and purchased a pound of #18 count shrimp and hickory smoked bacon for making Fried Rice!!! My dinner was delicious!!

The Brats Keep Comin’…and with Great Flavor!

 I have never known a butcher shop that had as many different flavors of brats as Northern Meats…and every flavor type is out-of-this-world! Smokehouse Glenn has developed yet another flavor to add to his collection of home-made brats in his store. Today, I tasted Chili Cheese Brats…Mmmm!

Glenn starts off with his tried – n – true beef and pork brat mixture but the usual ends there. Next Glenn adds the amazing tasting Detroit National chili coney sauce, which I would rate the BEST coney sauce on the planet! Finally there is cheddar cheese to top off the recipe’s flavoring! This recipe mixture makes Glenn’s brat flavorful, moist and juicy! Johnson who? I would want to eat these without a bun so I can make as much room down in the stomach for brats!!!

Any Chicken Lover Will Eat Up This New Marinade Flavor!

 Let me make one thing perfectly clear – I LOVE CHICKEN!!! Baked, BBQ, Fried, Broasted – Chicken -on-a -Stick, Croatian, Sesame Chicken, General’s Chicken…you get the picture! Smokehouse Glenn brought in a new “test kitchen item” today that I’ve never tasted before!

Mesquite Marinaded Amish bone in chicken is here for the tasting! Glenn got this chicken from Amish farms that don’t use any hormone enhancement and these chicken pieces are good sized portions. Add them to Glenn’s new Mesquite marinade for flavoring and you are ready for some delicious grilling eats.

I have tasted Mesquite flavored BBQ sauce but I’ve never tasted anything marinaded in the correctly balanced flavor of mesquite. Glenn vacuum seals all portions in his marinade so the flavor is working until the chicken hits the grill!!! The flavor of this marinade is out-of-this-world! This chicken is incredible – extremely tender, juicy and, did I say, delicious! I am going to get some of this for Father’s Day grillin’ this weekend!

Sun dried Tomato & Basil Marinaded Chicken Breast

 Sun dried tomato basil boneless chicken breast is addition to the other chicken breast marinades Northern Meats carries – Butter Garlic, Italian and Habanero Lime! Another flavor Glenn is working on that he plans to bring in on a Wednesday is a Mesquite flavored Chicken Breast.

Smokehouse Glenn uses both the boneless hormone-free chicken breasts and his favorite, the bone-in Amish hormone-free chicken. Today’s sample was fantastic! The marinaded tomato and basil flavors penetrated the chicken, leaving a rich tasting essence of basil in the meat. The texture of the chicken itself was extremely tender and I love chicken! A great selection for the B-B-Q grill!

 

Smokehouse Glenn is also working on creating more of his gourmet “steak” burger patties. His has a Santa Fe, a southwestern style flavor that will eventually join Glenn’s list of other “steak” burgers – Cajun, Bacon, Mushroom & Swiss and also regular.

Delicious T-Bones on My Grill

Sunday morning after church, I told my wife that we need to stop by Northern Meats to get something for the grill tonight – we haven’t had steak in quite awhile!

Stopped in and and T-bone steak caught my eye so I asked Glenn to split the last remaining portion he had in the showcase for me. Turned out I left with two luscious steaks just over a pound each! I bought some of Spicy Jo’s “Seasoning X” Sweet & Spicy Seasoning to rub on my T-bone before grilling.

I was practically drooling like Willey Coyote when the grill was fired up, anticipating my dive into the finished product!

Let the pictures sell the rest of the store – our steaks were tender, juicy and Oh, so good, managing to pause to take the photo of my progress half way thru my portion! Chairman’s Reserve Beef is worth EVERY BITE!!!

Lamb Fest With Chops & Ribs!

 Leg of lamb has always been the family meat of choice during Easter time at our home and I really love it!

 

Glenn recently received a shipment of lamb rack of ribs in so he decided to cut up some chops out of them and also some loin chops. Northern Meats also carries boneless leg of lamb, lamb shanks and lamb stew meat. Glenn is always helpful to provide cooking tips for all your lamb purchases and his neighbor, Spicy Jo, has all the necessary seasonings for creating the finest tasting lamb meals.

Traditionally, lamb is a holiday celebration meat for either Christmas of Easter but just look at those lamb chops! They are slightly smaller than pork chops but the flavor of properly seasoned and cooked lamb! Mmmm, I want to get those and cook ’em up right now!!!

Incorporating all the basic ingredients for the traditional pasty – potatoes, carrots, rutabagas, onion with pork sausage, Smokehouse Glenn was able to place all this with a sausage casing and – voila!

Dearborn Sausage is quickly developing a name for themselves, thanks to Smokehouse Glenn creating a link from downstate to the U.P. Today’s featured product is Old Style Wieners.

Wieners or hot dogs, whichever name you call them, Dearborn retains the original concept of creating a hot dog by following some simple, old style methods of dog making. These wieners are produced with a course grind to their meat recipe, adding a traditional smoke flavor, using a natural casing that give you that snappy texture when you bite into them. Glenn had a hand in developing this product which has held up well in sales throughout the years. Reflecting on several occasions when I went to major league ball games, I always liked the hot dogs sold at the ball field. I am willing to bet to was due to the smoke flavoring that set these apart from commercial grade dogs in the grocery store.Dearborn's Old Style Flavor!

 

Grilled with spicy brown mustard and sauerkraut on a fresh, home-made bun is a great combination for any sporting event.

 

Sample Saturday on Feb. 23rd was successful. There was plenty of bacon sold at Northern Meats. Spicy Jo sold creamy potato soup with bacon, which was a hit with customers also. Spicy Jo is now carrying bulk spice blends that she is selling, also fresh ground coffee and Keewanaw Bay jam.

Smoked Turkey Tenders

I have tasted over 50 different items from Northern Meats over the last year, many items came from Smokehouse Glenn’s smoker itself but never have a tasted such a great tasting items like Glenn’s smoked turkey tenders.

Glenn was working more magic in his smoker this week with plain turkey breasts. Whoa, wait a minute..turkey breasts are white after they are cooked. Look at Glenn’s smoked turkey tenders – they’re pink! That’s because Glenn cured these quality turkey breasts then placed them in his smoker.Northern Meats Smokehouse Glenn

 

The final product is tender turkey meat that almost tastes like – HAM! This is truly a great tasting flavor transformation that Glenn has perfected; stop it and ask Smokehouse Glenn about these delicious Smoked Turkey Tenders!
