Leave it to Smokehouse Glenn to find another great tasting product to hit his store – Summer Sausage fro Titletown Brewing Company. Out of Green Bay, WI., Titletown Brewing Company has revived the tradition of handcrafting quality beers. One taste takes you back to an era when Green Bay had five breweries serving fresh beer to the local community. Titletown Brewing Company offers a selection of nine different beers created in their micro brewery.

The three flavors of summer sausage Glenn brought in today each incorporate one of the beers brewed at Titletown. Canadeo Gold sausage is named after Packer great, Tony Canadeo. The beer used in this sausage posses a golden, malty, and clean, this kölsch could be mistaken for American lager but for its subtle fruity aroma and spicy hop flavor.

Green 19 IPA is made with this particular brew showcasing a complex blend of citrus-like American hop varieties, their bitterness well-balanced by complex malt for exceptional drink-ability.

Dark Helmet is a German-style black lager has a rich aroma of coffee, chocolate, caramel, and toasted malt, medium-full body, and a roasty yet smooth finish. All of these three summer sausages are vert tasty, great on your favorite cracker along with a small wedge of cheese.

Northern Meat’s New Sea Salts Selections!

 Glenn’s own smoked polish kielbasa was kicked up a notch with some pan frying time in some of the Tuscan Herb infused olive oil to get things going. Next this sauteed kielbasa was mixed in with a batch of Armenian Rice Pilaf and Voila! There is a great lunch full of flavor and easy to create!

A new product line of seasoning to Northern Meats is an assortment of sea salts from two suppliers Glenn is doing business with. The Salt Works from Woodinville Washington and S~A~L~T Sisters of Goshen, Indiana. In Glenn’s sea salt sampler basket, he had four varieties of flavored sea salts from the Salt Works that Glenn in packaging himself from bulk. These flavors I tasted myself and was impressed with the varied flavor combinations found in each of these blends: Habanero Heat Sea Salt, Himalayan Pink Sea Salt, Jalapeno Sea Salt and Smoked Sea Salt. Each of these salts had a distinct, lively flavor to them and I’ll bet these each would accent the taste of any dish they were used in.

The Salt Works has a very informative website about the salts they sell and the numerous uses for salt (other than simply for the table salt shaker). I found out reading the Salt Works page on salt in general, that salt can be purchased in varied types of salt: mainly – Flavored ( Fusion® flavored salts bind natural ingredients to sea salt crystals ), Flaked,( a light crystal reminiscent of snowflakes. Seawater is evaporated using the natural processes of sun and wind ) Finishing ( most admired for their unique textures—either moist crystals or delicate flakes)and Course ( large-grained salt crystals best used in a grinder, providing an easy way of serving up freshly ground sea salt ).

Pork Loin Like I’ve Never Seen – or Tasted!

Today, I saw something I’ve never laid eyes on before – the biggest pork loin I’ve ever seen! The thickest end had to be bigger in girth than a baseball bat! I would guess the weight had to be between 2 to 3 pounds. Size is one thing – taste  is a whole different matter and Glenn came through again. He found a pork loin from a meat packing company out of Chicago that delivers the goods on a tender cut that was delicious.

Collaborating with his flavor partner, Spicy Jo, Glenn seasoned sliced cutlet pieces of this loin with “Sweet & Sassy Garlic Spice” then sauteed them in a fry pan…Mmmmm, were these tasty! I say “were” because they are all gone!! Nestled on a bed of rice pilaf, this pork tasted great. Of course, this pork would also taste great on the grill coated in BBQ sauce, slow cooking or let it marinade in a favorite flavor of your choice and when the cooking’s done, you are in for a fantastic meal!

Ham Steaks – A Slice of Delicious Dearborn Goodness

 Smokehouse Glenn brought in samples of his personally cut ham steaks; a thick sliced slab of great tasting ham from a Dearborn smoked ham. This is a real convenient serving of delicious Dearborn smoked ham so you don’t have to be concerned with eating an entire Dearborn ham all by yourself.

Glenn has shared Dearborn ham with us before, let me tell you, that is about 8 to 10 pounds of ham at one sitting and you don’t want any of that to go to waste so Glenn came up with the idea to just slice slabs of ham from one of those Dearborn hams and make individual steaks that can be warmed up as a main dish for a meal, barbequed, oven baked with a glaze or diced up and used in a main dish in a variety of ways, like an omelet, a salad, even on Hawaiian pizza!

Improved Natural Casing Wieners Are Perfect!

If you go back to our June 19th page, Smokehouse Glenn made some delicious old style wiener; the ONLY draw-back to it was that the natural casings Glenn used were a smaller diameter than what he wanted to use.

This time, Glenn procured the size casing he had in mind the first time, so now you have the ultimate “old style” wiener that should be the envy of all other wieners! Old style meaning that the meat is ground courser than today’s recipe; Glenn knows how to put the smoke to these wieners and the natural casing gives the proper “snap” each and every bite!



What I like about the proper size casings is that it allows for More Pork to be stuffed in these wieners – and the smoke flavor makes these fantastic!!!

Any Chicken Lover Will Eat Up This New Marinade Flavor!

 Let me make one thing perfectly clear – I LOVE CHICKEN!!! Baked, BBQ, Fried, Broasted – Chicken -on-a -Stick, Croatian, Sesame Chicken, General’s Chicken…you get the picture! Smokehouse Glenn brought in a new “test kitchen item” today that I’ve never tasted before!

Mesquite Marinaded Amish bone in chicken is here for the tasting! Glenn got this chicken from Amish farms that don’t use any hormone enhancement and these chicken pieces are good sized portions. Add them to Glenn’s new Mesquite marinade for flavoring and you are ready for some delicious grilling eats.

I have tasted Mesquite flavored BBQ sauce but I’ve never tasted anything marinaded in the correctly balanced flavor of mesquite. Glenn vacuum seals all portions in his marinade so the flavor is working until the chicken hits the grill!!! The flavor of this marinade is out-of-this-world! This chicken is incredible – extremely tender, juicy and, did I say, delicious! I am going to get some of this for Father’s Day grillin’ this weekend!

Another Test Kitchen Item – Mac & Cheese Brats????

If he can case it in sausage casing; Smokehouse Glenn can get it done! I have never heard of all the various flavors of brats coming out of Northern Meats in Ishpeming, but it’s happenin’!

The latest test kitchen flavor to invade the world of brats are Mac& Cheese Brats! Young kids of the area unite and give out a shout! Mac & Cheese has taken on a new form but the taste is still there.

Glenn uses, as always the best in sausage for these brats but has added macaroni and cheddar cheese to his mix. As you can see from the close up, the macaroni is there along with the cheese but Glenn needs to change his preparation stage a little. Before mixing together a the necessary ingredients, Glenn separately added sausage, cheese and mac in his giant mixing bowl. The one change to this recipe next time will be that he needs to mix the mac and cheese together first before adding it to the sausage mix so the mac will have the cheesey orange color AND flavor! Purely esthetics, mind you but without the mac being mixed properly with the cheesey cheddar, it won’t look like Mac & Cheese and neighborhood kids won’t believe it’s Mac & Cheese if it doesn’t look like Mac & Cheese.

Lamb Fest With Chops & Ribs!

 Leg of lamb has always been the family meat of choice during Easter time at our home and I really love it!


Glenn recently received a shipment of lamb rack of ribs in so he decided to cut up some chops out of them and also some loin chops. Northern Meats also carries boneless leg of lamb, lamb shanks and lamb stew meat. Glenn is always helpful to provide cooking tips for all your lamb purchases and his neighbor, Spicy Jo, has all the necessary seasonings for creating the finest tasting lamb meals.

Traditionally, lamb is a holiday celebration meat for either Christmas of Easter but just look at those lamb chops! They are slightly smaller than pork chops but the flavor of properly seasoned and cooked lamb! Mmmm, I want to get those and cook ’em up right now!!!

Northern Meats Provides the Very BEST!

I am a big corned beef lover – from deli sandwiches to traditional St. Paddy’s Day dinner – I Love it!!! Last Wednesday, talking with Smokehouse Glenn, he gave me the scoop on the BEST corned beef you can buy – Grobbel’s from downstate in Michigan!! Northern Meats carries Grobbel’s and I had my wife, Debbie stop in and get one for the weekend.

Saturday morning arrived and I couldn’t look at that brisket in the frig any longer – I retrieved the Lodge Cast iron pot and started in on 2 1/2 hour cooking process. By 2 p.m., I was setting up my platter to dive into a delicious dinner. It was extremely difficult NOT to snatch any slices off the platter before this photo was taken.
