Smokehouse Glenn took our office by surprise with a new item none of us would have ever thought of trying as a taste test sample item – Mesquite Chicken Patties. In the past, the taste (or lack of) in a processed chicken patty is something I would like to stay away from. Glenn’s freshly made patties are a product you will purchase more than once.
Starting off with ground white meat of chicken (and some dark mixed in) added to that a smoke mesquite flavoring and pressed into thick patties. Glenn pre-cooked these patties which enables them to hold together better without any outside breading added. The only remaining thing to do is warm them up before eating – in a pan, in the microwave, on the grill. Warmed up, Glenn served these patties on a hamburger bun, slice of American cheese and some Walnut Creek Black Bean Salsa.
Thick, juicy chicken patties with a hint of smoky flavor along with a sweet tasting salsa – Glenn has created one chicken patty with a delicious flavor. The patty held together well in the bun and it doesn’t have a breading for an outer coating. I want more….
Speaking of new test kitchen items, Glenn has added a chicken cordon bleu sausage and a Santa Fe chicken sausage to his ever increasing selection of available sausage and brats to buy.

Brats – kielbasa – hot dogs – sausage; you can find it at Smokehouse Glenn’s and it’s home made. Today, it was home made wieners and not just ordinary ones either. By customer request, Smokehouse Glenn brought us the “Bun-Busting Wieners”!!!
Bigger than ordinary wieners, packed with Glenn’s very own seasoning recipe, using select cuts of pork in natural casing – these are delicious! The flavor is big, the size is big; by the time you add your favorite condiments, the bun won’t be able to hold all this deliciousness!
As an added flavor boost, Smokehouse combined these tasty wieners with a barbeque sauce from Walnut Creek. One of several products from Walnut Creek, Glenn choose their Spicy Chipotle Apple Butter Barbeque Sauce to these sliced up wieners and voila – instant appetizer! Don’t let the Spicy Chipotle in the name shy you away from trying this sauce. That flavor is very mild in comparison to the sweet, apple butter flavor that is prominent in this sauce!
Using toothpicks, they tasted great by themselves OR you could serve them on your favorite cracker for extra appetizer goodness!
NEW from The Salt Works of Seattle, WA. Glenn just received Black Hawaiian Sea Salt!! I am already a flavor fan of the Himalayan Pink Sea Salt, containing 84 trace minerals, very tasty and better than ordinary table salt. The Black Hawaiian Sea Salt is solar evaporated Pacific sea salt combined with activated charcoal.
Whether it’s premium meat, assorted seasonings or rubs, savory condiments, sea salts, flavored olive oils or balsamic vinegars; Smokehouse Glenn’s in the Country Village in Ishpeming is the place for your next meal planning.

Smokehouse Glenn has the biggest variety of brat flavors I’ve EVER found in a meat market! Today, Glenn brought in his legendary “jalapeno and pepper jack” brats BUT in patty form on buns. These brat patties are incredible “as is” just because Glenn starts off with premium select cuts of pork, coarsely ground, his special seasoning recipe, bits of jalapeno peppers and chunks of pepper jack cheese.
However, Glenn didn’t stop there with his flavoring. He brought in two samples from the dozens of specialty condiments found at Smokehouse Glenn.
Mama Selita’s Jalepeno Ketchup has “Sassy Attitude” made by from RedGold Tomatoes. Their slogan – Use it on whatever your heart desires. This is definitely ketchup plus extra flavor. I would use this on my home made oven baked french fries!!!
Woeber’s Kickin’ Buffalo Mayonnaise is definitely a condiment spicy flavor lovers should have on their table. The secret to this feisty flavor is the red cayenne peppers used in their recipe. This is the fourth Woeber’s product that I love; I’ve tried Horseradish Sauce, Jalapeno Mustard and the Sweet &Spicy Mustard – very good and tasty flavoring!
Glenn offers his brats in patty form during the summer but in brat links form, they’re always available all year long.

The one good thing about Smokehouse Glenn’s amazing meat store, beside the fact that he carries the BEST in beef, pork, chicken or seafood is that he has products that cover all meals of the day – breakfast, lunch and dinner.
Today, Glenn reached into his breakfast goodie bag and pulled out several batches of his home made breakfast sausage and added two different yet flavorful balsamic vinegars. Like all his home made sausages, Glenn starts with the leanest cuts of pork shoulder, his seasoning recipe perfected of the years and ground to just the texture. In addition to an already great tasting product, Glenn decided to add a flavored balsamic vinegar to each of his two batches of sausage – Honey Ginger and Black Cherry vinegars. Each batch had its own marinade of flavored vinegar over night then skillet cooked in the morning. These vinegars explode with flavor and each saturate the sausages with their distinct flavor.

Since my very first taste of Smokehouse Glenn’s homemade hot dogs, I have relived the flavor sensation of great tasting dogs I ate at the Cleveland Indians ballpark as a kid. They always tasted 10 times better than what we ate at home for dinner. Once again, Glenn brought in his homemade hot dogs – his recipe incorporates a course ground blend of beef and pork smoked AND in natural casing! The flavor doesn’t get any better than this – heaven in a bun!
Any great tasting hot dog worth eating needs to be complimented with an equally great tasting mustard and Glenn carries only the best from Woeber’s of Springfield, Ohio. Today, I sampled Woeber’s Sandwich Pal Mustards in Jalapeno flavor and Sweet & Spicy. I need a mustard to deliver a little more flavor than simple salad mustard and both of these flavors are A-1! Jalapeno flavor has just enough of the jalapeno flavor to make it stand out in the crowd of spiced mustards. The Sweet & Spicy variety favors the sweet side like that of a sweet relish taste. There is a very mild amount of spice that is a pleasant blend of tastes. This flavor does have an appearance of a spicy brown mustard but don’t let the color fool you!
Smokehouse Glenn is always working hard to stay stocked up on his premium selection of steaks, chicken and chops. Stop in soon and take advantage of his freshly made Andouille and smoked polish sausage. The area’s “custom cut butcher” also has – alligator! Fresh, frozen one pound packages of lean tail meat! This sounded very tempting to try – so much so that I looked up a recipe from the Food Network’s website and found a Cajun recipe from Emeril Lagasse.
Stewed Alligator in Creole Sauce
2 tablespoons olive oil
1 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped bell peppers
2 tablespoons minced garlic
3 cups peeled, seeded, and chopped plum tomatoes
1/4 cup chopped fresh basil
2 tablespoons chopped fresh oregano
2 teaspoons chopped fresh thyme
Salt and cayenne pepper
Fresh ground black pepper
2 teaspoons Worcestershire sauce
3 cups chicken stock
11/2 cup chopped green onions
1 pound alligator, cut into 1-inch pieces
8 tablespoons butter, at room temperature
Crusty loaf of French bread
2 tablespoons finely chopped parsley
In a saucepan, heat the olive oil. When the oil is hot, saute the onions, celery, and peppers for 1 minute. Add the garlic and continue sauteing for 1 minute. Stir in the tomatoes, basil, oregano, and thyme. Season with salt, cayenne and black pepper. Add the Worcestershire sauce and chicken stock. Bring the liquid up to a boil. Add the green onions and alligator, cover. Simmer the mixture for 12 minutes. Remove the sauce from the heat and swirl in the butter. Spoon the stew in a shallow bowl. Garnish with parsley. Serve with the crusty bread.

Smokehouse Glenn is by far the best sausage maker in the area – whatever he stuffs in a natural casing is thumbs up delicious! Today, he shared his fresh polish sausage with us topped off with a choice of two of his new BBQ sauces. I tried both of his BBQ sauces that he brought in – Sugar Free BBQ Sauce & South Texas BBQ Liquid!
I already know that Glenn’s Polish sausage is delicious but the test was which of his BBQ sauces would win a favorable vote. It is surprising that the Sugar Free sauce still had a sweet taste to it but it does have a form of sugar (maltitol) in it or it wouldn’t have it’s sweet taste. The South Texas BBQ is thick, hearty and smoky sweet! My choice is the South Texas – it reminds me too much of my favorite sauce already! Either choice, you will love Glenn’s new sauces!

Smokehouse Glenn always brings in great tasting, simple dishes to sample from ingredients available from his shop, Smokehouse Glenn’s. Today, Glenn made two chicken stir fry dishes using his two new oriental marinades; Sweet Honey Orange and Mandarin Teriyaki from Excalibur Seasonings & Marinades.
Glenn started by cutting up chicken breasts, placing them into a vacuum seal bags, each with one of his new marinade sauces. He let these sit over night and cooked them up in the morning. Mixed them up in a portion of cooked mixed vegetables and serve! I tasted each dish and also tasted each sauce separately and these sauces are great!! Sweet Honey Orange is robust with a rich citrus orange flavor and a hint of honey. Mandarin Teriyaki had a rich soy, garlic and sesame taste that was equally delicious. I like to make Lo Mein noodles and have perfected my own sauce recipe but these marinades would be a great base for a glaze that I usually make to mix in with the noodles. Glenn’s customers will certainly enjoy these two new items in his store.

Smokehouse Glenn fires up his grill this morning to give the office a taste of some great Southwestern flavor on grilled cuts of premium beef. Sirloin and Ball tip cuts of beef are very lean and very unforgiving IF you don’t watch them closely on the grill or in the skillet. However, Glenn cooked these right and our taste sampling was out of this world good!
Taking his two beef cut selections, Glenn placed the beef in a vacuum bag along with an ample amount of his Southwestern Marinade; sealed it out and placed it in his frig overnight to get happy. This morning, the beef met with Glenn’s hot grill and was cooked medium and sliced into bite-sized chunks – Mmmm! This marinade is spicy tasting and very good. The label only discloses there are “spices” in this mix – all I know is what my taste buds tell me and this is a great flavored marinade. I sampled the marinade by itself and could taste that this is on sauce that I need in my spice cabinet. Glenn and I both agreed that this marinade would be a great flavoring for beef used in a fajita dish!

Heading into the memorial Day weekend, Smokehouse Glenn is sharing two items that he made with items from his store – very easy and very delicious. Using his Italian sausage and pepperoni, Glenn created a home made pizza with several toppings and home made dough. Glenn’s garlic olive oil covered his dough once it was spread out on the pan. Topping of sauce, mushrooms, green, red & yellow peppers, onions and cheese! Mmmmm! Delicious flavors all throughout this pizza with just the right amount of topping that I like – many!!
For a quick side dish, Glenn made some home made cole slaw flavoring it with three of his balsamic vinegars from his store. The base ingredients of shredded green cabbage, carrots, red cabbage, Glenn used his Strawberry and Serrano Honey vinegars and Chipotle olive oil to make his dressing. A great tasting dish to add to your Memorial Day cook out this weekend.
