Today, Glenn reached into his breakfast goodie bag and pulled out several batches of his home made breakfast sausage and added two different yet flavorful balsamic vinegars. Like all his home made sausages, Glenn starts with the leanest cuts of pork shoulder, his seasoning recipe perfected of the years and ground to just the texture. In addition to an already great tasting product, Glenn decided to add a flavored balsamic vinegar to each of his two batches of sausage – Honey Ginger and Black Cherry vinegars. Each batch had its own marinade of flavored vinegar over night then skillet cooked in the morning. These vinegars explode with flavor and each saturate the sausages with their distinct flavor.

Since my very first taste of Smokehouse Glenn’s homemade hot dogs, I have relived the flavor sensation of great tasting dogs I ate at the Cleveland Indians ballpark as a kid. They always tasted 10 times better than what we ate at home for dinner. Once again, Glenn brought in his homemade hot dogs – his recipe incorporates a course ground blend of beef and pork smoked AND in natural casing! The flavor doesn’t get any better than this – heaven in a bun!
Any great tasting hot dog worth eating needs to be complimented with an equally great tasting mustard and Glenn carries only the best from Woeber’s of Springfield, Ohio. Today, I sampled Woeber’s Sandwich Pal Mustards in Jalapeno flavor and Sweet & Spicy. I need a mustard to deliver a little more flavor than simple salad mustard and both of these flavors are A-1! Jalapeno flavor has just enough of the jalapeno flavor to make it stand out in the crowd of spiced mustards. The Sweet & Spicy variety favors the sweet side like that of a sweet relish taste. There is a very mild amount of spice that is a pleasant blend of tastes. This flavor does have an appearance of a spicy brown mustard but don’t let the color fool you!
Smokehouse Glenn is always working hard to stay stocked up on his premium selection of steaks, chicken and chops. Stop in soon and take advantage of his freshly made Andouille and smoked polish sausage. The area’s “custom cut butcher” also has – alligator! Fresh, frozen one pound packages of lean tail meat! This sounded very tempting to try – so much so that I looked up a recipe from the Food Network’s website and found a Cajun recipe from Emeril Lagasse.
Stewed Alligator in Creole Sauce
2 tablespoons olive oil
1 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped bell peppers
2 tablespoons minced garlic
3 cups peeled, seeded, and chopped plum tomatoes
1/4 cup chopped fresh basil
2 tablespoons chopped fresh oregano
2 teaspoons chopped fresh thyme
Salt and cayenne pepper
Fresh ground black pepper
2 teaspoons Worcestershire sauce
3 cups chicken stock
11/2 cup chopped green onions
1 pound alligator, cut into 1-inch pieces
8 tablespoons butter, at room temperature
Crusty loaf of French bread
2 tablespoons finely chopped parsley
In a saucepan, heat the olive oil. When the oil is hot, saute the onions, celery, and peppers for 1 minute. Add the garlic and continue sauteing for 1 minute. Stir in the tomatoes, basil, oregano, and thyme. Season with salt, cayenne and black pepper. Add the Worcestershire sauce and chicken stock. Bring the liquid up to a boil. Add the green onions and alligator, cover. Simmer the mixture for 12 minutes. Remove the sauce from the heat and swirl in the butter. Spoon the stew in a shallow bowl. Garnish with parsley. Serve with the crusty bread.

Smokehouse Glenn is by far the best sausage maker in the area – whatever he stuffs in a natural casing is thumbs up delicious! Today, he shared his fresh polish sausage with us topped off with a choice of two of his new BBQ sauces. I tried both of his BBQ sauces that he brought in – Sugar Free BBQ Sauce & South Texas BBQ Liquid!
I already know that Glenn’s Polish sausage is delicious but the test was which of his BBQ sauces would win a favorable vote. It is surprising that the Sugar Free sauce still had a sweet taste to it but it does have a form of sugar (maltitol) in it or it wouldn’t have it’s sweet taste. The South Texas BBQ is thick, hearty and smoky sweet! My choice is the South Texas – it reminds me too much of my favorite sauce already! Either choice, you will love Glenn’s new sauces!

Smokehouse Glenn always brings in great tasting, simple dishes to sample from ingredients available from his shop, Smokehouse Glenn’s. Today, Glenn made two chicken stir fry dishes using his two new oriental marinades; Sweet Honey Orange and Mandarin Teriyaki from Excalibur Seasonings & Marinades.
Glenn started by cutting up chicken breasts, placing them into a vacuum seal bags, each with one of his new marinade sauces. He let these sit over night and cooked them up in the morning. Mixed them up in a portion of cooked mixed vegetables and serve! I tasted each dish and also tasted each sauce separately and these sauces are great!! Sweet Honey Orange is robust with a rich citrus orange flavor and a hint of honey. Mandarin Teriyaki had a rich soy, garlic and sesame taste that was equally delicious. I like to make Lo Mein noodles and have perfected my own sauce recipe but these marinades would be a great base for a glaze that I usually make to mix in with the noodles. Glenn’s customers will certainly enjoy these two new items in his store.

Heading into the memorial Day weekend, Smokehouse Glenn is sharing two items that he made with items from his store – very easy and very delicious. Using his Italian sausage and pepperoni, Glenn created a home made pizza with several toppings and home made dough. Glenn’s garlic olive oil covered his dough once it was spread out on the pan. Topping of sauce, mushrooms, green, red & yellow peppers, onions and cheese! Mmmmm! Delicious flavors all throughout this pizza with just the right amount of topping that I like – many!!
For a quick side dish, Glenn made some home made cole slaw flavoring it with three of his balsamic vinegars from his store. The base ingredients of shredded green cabbage, carrots, red cabbage, Glenn used his Strawberry and Serrano Honey vinegars and Chipotle olive oil to make his dressing. A great tasting dish to add to your Memorial Day cook out this weekend.

Smokehouse Glenn received a new sea salt flavor Tuesday and was just dying to use it so he whipped up this patch of Stir Fry for us this morning.
Starting out with a flank steak, (my favorite versatile cut) Glenn sliced up the beef and sauteed it in soy sauce and Szechuan Pepper Sea Salt from The Salt Works. Taking his vegetables, carrots, water chestnuts, baby corn, broccoli, sweet pea pods; Glenn cooked all them in a combination of Honey Ginger Balsamic Vinegar and Blood Orange Olive Oil. Extremely simple to prepare and very tasty! Again, another simply good tasting meal prepared from main ingredients found at Smokehouse Glenn in the Country Village, Ishpeming.

With the winter snow quickly disappearing, grills will be heating up on the patios soon but a second best meal maker is the slow cooker! My wife is looking for any excuse to get our unit out and use ti for making a dinner. Smokehouse Glenn did just that this morning with a premium cut of beef and three vegetables!
Before bedtime, Glenn sprinkled a prime rib roast with his Prime Rib Seasoning, sliced up onions, carrots and placed whole potatoes in his slow cooker. At 7 a.m., he sliced the potatoes and the meat, mixed up the pot and Voila! There you have it – Simple – Easy; practically covering the four food groups in one shot!

In the world of food and creating new taste sensations, one can’t be afraid to step out of the box. Smokehouse Glenn definitely did that today by introducing several fruit flavored balsamic vinegars to be used as toppings for – pancakes!
I am usually a traditional maple syrup and butter type of pancake eater. Glenn brought in three varieties of his fruit flavored balsamic vinegars – Maple, Blueberry and Strawberry. This morning when Glenn mixed up his pancake batter, he started off a new flavor twist by added some Butter flavored Olive Oil to the batter. The flavor infused extra virgin olive oils are intense. The pancakes alone contained a butter flavor that could be distinctively tasted just by sampling the cakes by themselves.
Now comes the moment when I have to step outside the box to see how pancakes would taste with vinegar as a topping. Strawberry was the first choice since that is one of my favorite fruits. The strawberry flavor was prevalent in the taste but it contained a bit too much acidic overture of my taste buds. Blueberry was next in line and I found that this flavor was highly concentrated with a delicious blueberry flavor with hardly any acidic aftertaste. Lastly was sampling the maple flavor; containing a hearty maple taste and also very little acidic aftertaste for the taste buds to deal with. All in all, I would say – Yes, it is palatable to eat pancakes with a fruit flavored balsamic vinegar successfully. One would have to pre-sample the particular flavor to use to gauge with particular flavor contained the least acidic taste that would be easy on the palate.

This morning, it was poultry time with Smokehouse Glenn featuring a recipe from his kitchen once again incorporating seasoning items from his store. Glenn got a hold of a recipe Roasted Garlic Chicken Swirl and in this recipe Glenn used his Apple Cinnamon Bacon, Butter Garlic marinaded Chicken along with Cinnamon Pear Balsamic vinegar from his store.
Starting out with his Butter Garlic marinaded chicken breasts, Glenn ran them through his “cuber” which tenderizes the chicken and flattened them out in one process. With the chicken breast flattened out, he then placed a mixture of fresh minced garlic, sauteed onion, cooked spinach, crumbled up Apple Cinnamon bacon and Cinnamon Pear balsamic vinegar. This mixture was placed on the middle of the chicken, rolled up and baked in the oven until the chicken was cooked. As you can see, very tasty – simple to make and delicious!

Smokehouse Glenn presented a tasty flavor spin to pork this morning which will have you squealing for more! Today, Glenn took one of his Chairman Reserve pork loin roasts and gave it a flavor infusion. First, Glenn sprinkled the roast with a generous amount of his Ultimate Pork Chop and Roast Rub. Then he drizzled a combination of Ginger & Honey Balsamic vinegar along with Lemon Olive Oil.
The vinegar has a light flavor combining some intense ginger along with a subtle hint of honey – extremely good. The olive oil has a fresh, concentrated infusion of lemon which interacts well with the ginger and honey tastes. A pork lover’s delight!!
