Potato Sausage WITH…Jalapeno Peppers!!!!

Smokehouse Glenn, if you don’t know by now, is a man that is always experimenting with items available from his business, Northern Meats, located in the Country Village in Ishpeming, Michigan. You may recall in Episode 20, Glenn brought in some of his home-made potato sausage, which was incredibility delicious.

Smokehouse Glenn added some zing to this recipe!!!

Today, Smokehouse Glenn brought in potato sausage…but with a twist!!! This particular recipe of his included jalapeno peppers. Also included in this recipe is potatoes, onions, beef / pork along with Glenn’s own spice mixture. Glenn did get a request to put together this particular recipe from a customer but he didn’t go too overboard with the jalapeno peppers but they do add some zing to the sausage’s flavor!!

The beef and pork product is course grounded, additional recipe ingredients are added then stuffed into casings. Glenn’s potato sausage is easy to cook. Place the sausage ring in a non-stick pan with a small amount of water in the bottom. Let the sausage par boil in the water, when the water cooks out, brown the sausage lightly on each side.


With on onset of fall, football and hunting seasons approaching, Smokehouse Glenn is looking to put together what he is calling “Snacker Trays”; which will offer a variety of sausages, meat sticks, cheese curds together for purchase. Glenn is also considering a “Wild Game Snacker Tray” featuring buffalo, elk and venison meats together with cheese curds, which will also taste delicious!!


Smokehouse Glenn’s taste partnership with his store neighbor, Spicy Jo’s is offering soups to their inventory of items. They both collaborated on a broccoli, cheese and bacon soup that was outstanding! Spicy Jo’s also carries an extensive assortments of spices for beef, pork and chicken; marinades, oils for cooking and creating your own marinades and her new collections of soup mixes.

Skirt Steak With a Special Marinade

Smokehouse Glenn featured skirt steak today for his featured beef item and this particular cut was prepared two different ways.

The first selection of skirt steak was seasoned with an ordinary blend of steak seasoning, predominately made of salt, onion powder and garlic. The second selection Glenn used a Habanero Lime packaged marinade to up the flavor ante which was very tasty. Habanero peppers are 5th on the Scoville Heat Units chart, no possessing a particularly distinct taste of its own but very fiery amount of heat this pepper possesses.

Glenn cooked his beef portions on his George Foreman Grill this morning, preferring to cook indoors and try a different cooking application then his outdoor B-B-Q grill. The skirt steak is a thinner, more marbleized selection from the cow so it cooks up fast when preparing it to a medium rare to medium consistency. Because the skirt steak is so slender and thin muscle mass, it slices up perfectly for the ideal fajita or oriental stir fry dish, I would even try using this steak for making my own version of a steak and cheese sandwich.


Of course, when it some to beef, Northern Meats carries an extensive selection of cuts for practically any type of dish his customers are looking for and if he doesn’t carry it, Smokehouse Glenn knows how to get it. His selection also includes select cuts of Chairman’s Reserve certified premium beef in filets, rib-eye and NY strips.


Pork selections come in bone in or boneless pork chops, porketta roast, bacon and hams. Chicken cuts come in boneless breasts, marinaded chicken breasts in lemon-pepper, butter-garlic, B-B-Q, Italian and habanero lime flavors.


Glenn can also provide sausage making services for any pre-cut venison brought to his store and can connect hunters with an outside source that will process and package venison for anyone needing that particular service.

Hunters Sausage and Veggies From Smokehouse Glenn

Smokehouse Glenn brought in some of his home made snack sticks he calls, Hunter’s Sausage. This is a pork product that is cold smoked by Glenn for over 20 hours in his smoker. These go along with many of the other smoked snack meat sticks that are available from Northern Meats.

Also brought in by Glenn is a new product that he found by a Michigan company from Chesterfield called Safie’s. Today’s particular product is pickled green beans. Other varieties of vegetables offered by Safie’s that are available from Smokehouse Glenn are Pickled Asparagus, Pickled Beets, Deli-Style Dill Pickles, Hot & Zesty Garden Mix and Bread & Butter Pickles. Smokehouse Glenn’s Pork Sausage Is First Rate In Taste

Marquette10/12/2011– Smokehouse Glenn astounded me with his great tasting pork sausage! Not all pork sausage is processed or flavored the same and today was a tasting experience that rates on the winning end of  a “10”  in texture, taste and leanness of grade.

Glenn’s pork sausage is available in either bulk quantity that will add a tremendous taste addition  to a breakfast omelet or my yet to become famous pizza.  This sausage is also available in natural link casing that would accompany any stack of pancakes or variety of prepared style of eggs.

Glenn’s own variety of  sausage is processed from lean cuts of shoulder pork, a good 80% leanness which is evident by the very small amount of shrinkage and small amount of pan drippings that does not accumulate during the cooking process.  Most commercial sausages can vary from a 50/50 blend of meat to fat and range upward to 60/40 or sometimes 70/30. There is minimal  shrinkage visible from Glenn’s product which, again enhances the sausage taste.

Glenn has developed his own seasoning proportions in this variety of sausage that has just a slight amount of spicy “zing” to it that would rate JUST slightly above mild yet not chase away customers who would stay clear from sausage labeled HOT!

One cooking application Glenn shared during our discussion was his use of this sausage in bulk form, cooked and crumbled into a cheesy, white sauce that is served over Penne pasta…Oooo, that has my vote in my collection of pasta recipes. Being someone who loves to make his own pizza at home, today, I have tasted a sausage that contains the right amount of zing in spicing combination that I would put on my pizza every time I bake one!!!
