Butter Spreads For Toast and More…

No meat products to sample from Northern Meats today but we do have two separate flavors of butter spreads. Smokehouse Glenn is expanding his floor space to include olive oils, marinades and other tasty products and one new product is these two samples from Walnut Creek Foods. Sweet Potato Butter and Pumpkin Butter were new additions to Northern Meats.

Cheesy Bacon Dogs Are Tasty Finger Food!

Another easy and delicious snack item though up by Smokehouse Glenn is his very own – Cheesy Bacon Dogs! Real simple item to make using three items from Northern Meats. Glenn takes Dearborn Skinless Franks, slices them down the middle and stuffs pieces of sliced Colby Jack cheese then tops each dogs with a slice of his hickory smoked bacon on top. Slide the pan into the broiler and cook until the bacon is done! Simple to make – delicious items made with Glenn’s own thick sliced smoked bacon, Mmmm!

Test Kitchen Item is 100% Good!

 Smokehouse Glenn always loves the challenge of taking on a new product suggestion from his customers. Sometimes, he just likes to challenge himself to see if he can make something tasty that he’s never made before. Such is the case with today’s 100% Beef Sticks.

Already available at Northern Meats are a wide variety of snack sticks that are a pork based meat product – but what about using beef? Glenn choose to use a regular lightly seasoned spice recipe in theses sticks to avoid any excessive saltiness or extreme flavoring. Using 100% beef for this recipe yielded a denser texture to this product. The mild flavor is present in theses sticks, no excessive oiliness or mushy texture like several mass produced commercial meat products. I would give this a thumbs up for purchasing to satisfy my snacking needs.

Beef Bacon New Test Kitchen Item at Northern Meats!

 BACON! What would man do without it! Everything goes better with bacon. But…can you make bacon from something other than pork? That is a test kitchen challenge that Smokehouse Glenn tackled this week.

What if one needed bacon but didn’t have any pork to smoke it from? Glenn decided to look into the prospect of using a cut of beef from the area of the steer known as the plate to possibly generate some bacon from it. Glenn told me that the plate section is used in the making of pastrami; one of my favorite deli meats. Glenn used his exact same process to make bacon but substituted a sliced plate portion of steak for his kitchen experiment. Was he successful? You bet – just look as this photo! Great smoky flavor, fried up well in his skillet; maybe not as crispy as bacon but delicious and very bacon-like! Glenn, you are amazing!

Beef Tri-Tip is a Tasty and Affordable Entree

 There are three cuts of beef from the sirloin section of the steer, one section, the tri-tip was brought in by Smokehouse Glenn. This particular cut is slightly marbled extremely tender and flavorful! Glenn cut the steak from out of the tri-tip roast, which is a larger cut from the sirloin section.

He added to this meat a burgundy pepper flavored marinade, which is one of Glenn’s favorite flavorings and this sampling was amazingly good.

This cut I would pick for shish kabobs or fajitas or a stir fry dish calling for beef. Don’t forget that Northern Meats has an extensive variety of beef, pork, chicken or seafood! The other week I had a bad craving for fried rice, needing bacon and some shrimp. I pick up two packages of hickory smoked bacon and 20-25 count shrimp. My fried rice was DELICIOUS!!!

Pork Loin Like I’ve Never Seen – or Tasted!

Today, I saw something I’ve never laid eyes on before – the biggest pork loin I’ve ever seen! The thickest end had to be bigger in girth than a baseball bat! I would guess the weight had to be between 2 to 3 pounds. Size is one thing – taste  is a whole different matter and Glenn came through again. He found a pork loin from a meat packing company out of Chicago that delivers the goods on a tender cut that was delicious.

Collaborating with his flavor partner, Spicy Jo, Glenn seasoned sliced cutlet pieces of this loin with “Sweet & Sassy Garlic Spice” then sauteed them in a fry pan…Mmmmm, were these tasty! I say “were” because they are all gone!! Nestled on a bed of rice pilaf, this pork tasted great. Of course, this pork would also taste great on the grill coated in BBQ sauce, slow cooking or let it marinade in a favorite flavor of your choice and when the cooking’s done, you are in for a fantastic meal!

Another New Taste Discovery From Smokehouse Glenn

Through the daily meat processing steps of a custom cut butcher, one might think that the work routine would become boring and mundane – except at Northern Meats! Today, Glenn brought in the Santa Fe sausage – bit don’t be fooled by it’s appearance. I thought it was another fantastic tasting brat but it’s not – it’s a plump sausage, full of Glenn’s new flavoring with his newly discovered “southwestern spice”. I not only was treated to tasting this delicious new product but Glenn dressed it up by putting his Santa Fe sausage in a fresh wheat hot dog bun; poured a layer of mild salsa on top and melted some Mexican blended shredded cheese to finish things off!

Glenn has shared Dearborn ham with us before, let me tell you, that is about 8 to 10 pounds of ham at one sitting and you don’t want any of that to go to waste so Glenn came up with the idea to just slice slabs of ham from one of those Dearborn hams and make individual steaks that can be warmed up as a main dish for a meal, barbequed, oven baked with a glaze or diced up and used in a main dish in a variety of ways, like an omelet, a salad, even on Hawaiian pizza!

Keep Cool In the Heat With Home-Made Cold Cuts

 

Smokehouse Glenn is usually very accommodating with his willingness to break out the BBQ grill and cook something tasty before 9 am on Wednesdays. However, this morning, our custom cut butcher wasn’t swearing over a hot grill with the morning temperature reaching 80 degrees.

Improved Natural Casing Wieners Are Perfect!

 

If you go back to our June 19th page, Smokehouse Glenn made some delicious old style wiener; the ONLY draw-back to it was that the natural casings Glenn used were a smaller diameter than what he wanted to use.

This time, Glenn procured the size casing he had in mind the first time, so now you have the ultimate “old style” wiener that should be the envy of all other wieners! Old style meaning that the meat is ground courser than today’s recipe; Glenn knows how to put the smoke to these wieners and the natural casing gives the proper “snap” each and every bite!

 

 

What I like about the proper size casings is that it allows for More Pork to be stuffed in these wieners – and the smoke flavor makes these fantastic!!!
